The retail mix
Supermarket ground beef, including a lot of retail grass-fed and organic, is blended from trim from many animals at once. Industry practice often puts a dozen or more carcasses into the same grind batch.
Do the rough math: if you cook ground beef twenty times a year from that system, you are eating cattle you will never name.
How we do it
